OPERA BOX Let them sip drama

This box we celebrate the world of opera with the Canadian Opera Company. Dramatic sips, wine pairings with harmony, moments that make even a solo evening operatic (but why not share with friends?).

BEST AVOCADO TOAST

THE COTERIE PAIRING: BEAUTIFUL HIGH ACID JASCI + LUSCIOUS AVOCADO TOAST

We love us some ripe, luscious avocado with a beautiful high acid white wine like this organic Jasci Pecorino.
An absolute match made in heaven. And yes, it's that simple this month, as no one has time to spend in the kitchen as we are too busy tuning into the FREE COC concert series at www.coc.ca and taking in all of the incredible talent. Don't miss Matthew Cairns & Vladimir Soloviev performing from Carmen and Macbeth.

Ingredients
  • One 8-ounce ripe avocado, halved, pitted and peeled
  • Fine salt and freshly ground black pepper
  • 4 slices whole grain or whole wheat bread
  • 1 clove garlic, peeled and halved
  • 2 tablespoons extra-virgin olive oil or unsalted butter, softened
  • Flaky sea salt, for serving
  • Crushed red pepper flakes, optional
Method
  • Mash the avocado with a fork in a shallow bowl until chunky. Season with fine salt and black pepper.
  • Toast the bread until browned and crisp. Lightly rub 1 side of each slice with the cut side of the garlic until fragrant; discard the garlic. Lightly brush the toasts with oil, and season with fine salt and pepper. Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.
